Jason Baker is taking on a new project: revamping the Wine Bar’s menu within the traditions of the bistro.
The Black Watch kitchen is running so smoothly that less than 6 months after open, Jason Baker is comfortable leaving his team to mind the fires without him. Baker will head over to the Wine Bar 5 days a week, remaining executive chef of the Black Watch — in control of menu development as well as ordering and management there.
The menu that he has set for The Wine Bar will debut sometime around his start date of November 15th (-ish), or at least that’s what we assume. Both the owner — Kevin Everleth, and Jason Baker, agree that Baker’s experimental tendencies are a bit more reined in here — Baker is progressing from the menu of The Wine Bar rather than completely branching away; his creativity will no doubt shine through in various ways, though expectantly in less of a conceptual manner than J.T. Baker’s.
