Ah, summertime….. Hot days. Sweaty nights. Ice cream delights.
Here is a recipe for one of my favorite new treats.
1/4 cup *Homemade Lemon Syrup
3/4 cup Seltzer (Polar Lemon)
2 small scoops Vanilla Ice Cream
Add syrup and seltzer to glass,
*To make Lemon Syrup
Zest lemons -save for later use…
Cut lemons in half and juice -save juice for later use
Put remaining lemon shells into sauce pan…
Cover with equal parts sugar and water
Simmer gently for an hour, occasionally pressing on lemons as they soften
Strain into glass jar, gently press lemons against strainer
Store your homemade syrup in the fridge for later use….
(Put the now soft and sweet lemons into a food processor and puree -save for later use)
Store syrup in fridge for later use….
